The Hondo Area Chamber of Commerce is proud to bring back the Parisa Pachanga! A "cook-off" of sorts of the county's favorite snack that brings out old and young who have held the family's recipe in their hands since birth. For 175 years this delicacy has been passed down with pride from French/German immigrants who knew a thing or two about raw beef and how to prepare it. Hyperlocal to South Texas, primarily Medina County and specifically Hondo, Castroville, Quihi and D'Hanis, parisa is as unique as the people who prepare it and in these parts this delicacy and it's varied recipes are taken very seriously.

This unique meat spread is traditionally made with finely chopped raw beef, peppers, spices, cheese and is cured with lemon or lime juice. Every recipe is indicative of the family it traveled to to the new world with, and is "the best" depending on who you ask. Some say the perfect vehicle for the spread is a saltine cracker, and is best washed down with an ice cold beer. At last year's inaugural event, Alvarez Meat Market took home the 1st place prize and more importantly, the bragging rights. Find out who will win this year... What’s in your recipe?
